Apple-Cranberry Dessert with Vanilla Pudding

When does the Holiday Season start for you? Is it when the weather gets cold and it starts to snow, or when shops starts to fill up with Christmas decorations and gift ideas, or is it that time when the house is filled with delicious Christmas smells. 

​

For me, it is all those cinnamony baked goods and that sour apple taste and cranberries. 

​

And so today I am bringing together those three of my favorite flavours into a easy and quick to make Christmas Dessert in a glass.

This dessert is great beacause you can make it beforehand and let it wait in the fridge or you can make it last minute even with a little leftover time.

Christmas Dessert in a Glass

Apple-Cranberry Dessert with Vanilla Pudding

​INGREDIENTS

​

  • 2 medium apples

  • 100g cranberries

  • 20-50g sugar (depending on how sour the apples are)

  • 50ml water

​

  • 400ml milk

  • 2 egg yolks

  • 70g sugar

  • 30g flour

  • 1tsp vanilla paste or vanilla extract

DIRECTIONS

​

1. Wash and remove the cores from the apples. Then cube into medium pieces.

2. Place a small pot over medium heat.

3. Add apples, cranberries, sugar and water to the pot.

4. Heat over medium heat, mixing in between, until the apples and cranberries have softened. This might take 10-15 minutes. Then remove from heat.

5. To make the vanilla pudding (custard), heat the milk in a medium pot over medium heat (do not boil).

6. In the meantime whisk the egg yolks lightly. Add half of the sugar and continue mixing. Then add the rest of the sugar and mix well.

7. Add flour also little by little. If needed add a little (1-2tbsp) milk to the egg mix to help mix in the flour. 

8. Add in vanilla paste or vanilla extract.

9. Once the milk has warmed up start pouring the milk slowly into the egg mix while mixing continuously (you might need a helper for this). 

10. Then transfer the pudding mix back into the pot and cook it on medium heat while mixing continuously until the custard starts to thicken up. Remove from heat.

11. Portion the desserts while still hot (the vanilla pudding will not be pourable once cool). Sprinkle over some cinnamon and decorate with fresh cranberries.

12. Can be served warm or cold. If serving later store in the fridge.
