The Ultimate Cheesecake Dessert without all the hassle.​

If I would ask you what is your favourite dessert, what would be your answer? Whenever I am asked this, I find myself really confused and I must say it is almost impossible for me to answer with just one thing. I just love some many different things :D But when it comes to desserts I can easily say it is cheesecakes, all the different kinds, I love them all! :) That is why I have a whole section here on my site, dedicated only to cheesecakes, classic baked cheesecakes, brownie cheesecakes and cheesecake desserts. When it comes to cheesecakes, I am a strong believer that nothing beats that super creamy baked cheesecake,  I mean, nothing! :) But you don't always have the time to spear for the prep and proofing. That is when you need something that resembles that creaminess, but with less time spent. That's why I think these cheesecake desserts in a glass are absolutely amazing! They take you about ten to fifteen minutes to make, well depending on how many you are making obviously, but still very fast, and they taste so delicious. They have that crunch from the cookies base, they are creamy and I mean just look how amazing those layers look in that glass! :) Show stopper I would say! :)

I a counting all the plus sides of this cheesecake in a glass and I am still not stopping :) I made this recipe with a cinnamon cherry topping, because the holidays are coming and I wanted to make something fitting. But you can make a similar topping with almost any other berry or fruit, or you can use fresh berries or fruits instead or some chocolate or caramel sauce. I mean the options are really endless and you can make it different every single time.

You can make these on the day you want to serve them and then you will have some crunch from the cookie base or you can pre make them a day before and then the cookies will have soaked some flavour and will be resembling the bakes cheesecake a little more. Both ways, it is really delicious! I promise everyone will be scraping those glasses clean :)​

RECIPE

No-Bake Cheesecake in a Glass

Super easy to make dessert in a glass

​INGREDIENTS

(makes 2 portions)

​

  • about 6-8 cookies

  • 150g (2/3 cup) whipping cream

  • 150g (2/3 cup) creamy thick yogurt or cream cheese

  • 50g (¼ cup) sugar

  • 1tsp vanilla paste/extract

  • 150g (2/3 cup) frozen cherries

  • 50g (¼ cup) sugar

  • 1 cinnamon stick or ½ tsp ground cinnamon (optional)

DIRECTIONS

​

  1. Crush the cookies in a blender, in a plastic bag with a rolling pin or with a pestle and mortar until you have a fine crumb. Start with 2 cookies per portion and add the crumb to your serving glasses to see whether you want to add more. I prefer a thicker cookie layer and that is why I use 4 cookies per portion.

  2. Whip the cream until stiff peaks.

  3. In a medium bowl combine the yogurt with the sugar and vanilla paste. Mix just until combined. Fold in about half of the cream first and then fold in the rest of the cream. Taste for sugar and add some more if needed. Add the cream layer on top of the cookie crumb. Refrigerate for the time you are preparing the cherry topping.

  4. To make the cherry topping add the cherries with the sugar and the cinnamon stick to a small saucepan. Heat over medium heat until the cherries have defrosted. Once defrosted, remove the cherries and continue heating the juices with the sugar until they thicken slightly and become syrupy.

  5. Add the cherries on top of the cream layer and finish with some syrup.

  6. Enjoy right away or make ahead and serve next day.
