Delicious Surimi Sticks & Rice Salad

A family favorite salad

I believe that it doesn´t always have to be fancy and complicated in order to be delicious. This salad in particular is made of very basic ingredients and it is also very easy to make, but we absolutely love it in our family and it is present during our birthday parties and sometimes Christmas and New Year celebrations. But because we love it so much, I also make it sometimes just for lunch or dinner.

If I think back to when I was a kid, this was also the salad all my Russian friends used to have on their birthdays and I used to love it already back then. It might have not been this exact salad, as everyone makes things differently and also the traditional one I know was always made with mayonnaise, as most Russian salads are. I wanted to keep it healthier and also I like to experiment with things and try to make them different and see whether it still tastes good, and I promise this one is really delicious even without the mayonnaise :) Sorry to all the mayonnaise fans out there :D But well, if you really really really want to make it with mayo, then just use mayo :) Works as well.

One little thing I want to mention is that you want to use basmati rice for this recipe, or another rice that doesn´t stick together, as any sticky rice would just make a very sticky salad and that is not very pretty :D So just use a rice that doesn´t stick :) Oh and also, use a sweet apple as it just tastes so much better in the salad than a sour apple. Just those two things and you are sorted :)

RECIPE

Surimi Sticks & Rice Salad

A family favourite

​INGREDIENTS

​

  • 180g basmati rice

  • 2 eggs

  • 1 small white onion

  • ½ cucumber

  • 250g surimi sticks

  • 1 sweet apple

  • 200g sweet corn (canned)

  • some fresh dill

​

  • 4tbsp natural yogurt

  • 1tbsp olive oil

  • salt

  • pepper

DIRECTIONS

​

  1. Boil the rice until cooked. Once cooked wash the rice with some cold water and strain with a sieve. Alternatively you can just leave the rice to cool uncovered, this will however take longer.

  2. Hard boil the eggs and leave to cool completely.

  3. Cube the onion finely. Also cube the cucumber, the surimi sticks, the eggs and the apple and chop the dill finely.

  4. Take a big bowl and add the cooled rice to it. Then add the onion, the cucumber, the surimi sticks, the eggs, the sweet corn, the apple and about a handful of fresh dill. Mix shortly.

  5. To make the dressing, in a small bowl combine the yogurt with the olive oil and season with some salt and pepper. Mix well until combined and then add to the salad. Mix the dressing with the salad.

  6. Transfer into another bowl for serving and decorate with some more fresh dill.

  7. Best enjoyed freshly made.
