Watermelon & Mint Summer Salad

Cool watermelon. Such a fun flavour.​

If I am​ not wrong there is a drink that is called "cool watermelon". It has the sweet taste of watermelon but there is also something that gives it this cooling sensation. That combination of the sweet watermelon with something that makes it almost feel like it is mixed with ice is absolutely amazing and perfect for the summer. So I had this idea of this drink in mind and was hoping to somehow bring it into a salad recipe. I was not quite sure what is that ingredient that makes this cooling effect, but I thought mint might work and so I decided to give it a go.

Most of my recipes​ are filmed during my first test run. They usually work from the first go and so I have decided to leave that extra testing run out. However, sometimes I feel like something little might need tweaking and that excatly happened with this salad. I just got the ingredients and didn't think too much on how much mint I should add to get enough flavour for my salad and achieve that "cooling sensation". I just took three branches of mint and thought that should do it :D Oh well.. I also didn't realize that the peppermint that I decided to get from our garden for this salad, has a really, I mean really, strong flavour and that it will definitely overpower other flavours. So on my first bite my eyes lightened up as I experienced that juicy sweet watermelon with the mint that did give the "cooling sensation" to the salad, for which I was looking for. However, as I continued eating the salad I also realised how dominant the mint flavour was and that I should have added much less of it. Therefore, I would say, if you are also using peppermint, use just one stald of peppermint instead of three like I did or you can also use another type of mint that has a milder flavour and then you can add a little more of it to your salad.

Watermelon & Mint Summer Salad
Healthy summer salad filled with a delicious combination of sweet and savoury flavours

​INGREDIENTS

1 shallot or one medium white onion
-
half of a cucumber
-
about 10 big green salad leaves (mild flavour)
-
1-3 stalks of mint (if using peppermint, use only 1)
-
100-150g (1-1 ½ cup) fresh blueberries
-
800-900g (5-6 cups) watermelon
-
200g (1 1/3 cup) feta cheese
-
olive oil

DIRECTIONS

Wash all your vegetables well.

Peel and half the shallot and then slice finely.

Half the cucumber, then half that half and cube into bite sized cubes.

Roughly chop the salad leaves.

Remove the leaves from the mint.

In a big salad bowl add the sliced shallot, the cubed cucumber, the salad, the mint and the blueberries.

Remove the skin from the watermelon and the seeds if you like. Cube the watermelon into bite sized pieces and add to the salad bowl.

Crumble the feta cheese into the salad bowl and drizzle with some olive oil. Mix the salad well.

Serve chilled.
